Brett shows cooks at home how to make a Dallas Cowboys BBQ Brisket Burger (for the Dallas theme) and Washington Redskins Chips (for the Washington theme).
Recipe: Bill’s Original 1/2-pound Burger

- 1/4 cup vegetable oil
- 2 teaspoons salt
- 1 teaspoon cumin
- 1 teaspoon cayene
- 1 teaspoon granulated garlic
- 1 teaspoon chilli powder
- 1 teaspoon chipotle powder
- 1/2 pound dark brown sugar
- 1 cup water
- 1 cup cider vinegar
- 1 cup apple juice
- 4 cups ketchup
- 1/4 cup lemon juice
- 1 cup molasses
- 1 cup honey
For the Burger: Makes 4 ½-pound burgers
2 pounds – Fresh ground chop meat. 80/20
4 each – of your favorite burger bun
For the BBQ Sauce:
• Heat a sauce pot on stove.
• Add oil and heat; do not allow to smoke or burn.
• Heat the spices and mix with the oil to allow their flavors to mature.
• Add water, cider vinegar, apple juice, ketchup, lemon juice, molasses and honey to the pot of spices. Simmer about 30 minutes. Sauce should be just thick enough to coat the back of a spoon.
For the Brisket:
If you don’t have time to slow smoke your own brisket for 12 hours:
A good substitution would be corned beef or pastrami to top this burger.
